Quick and easy homemade healthy fruit and nut bars 😋

How to make healthy nut and fruit bars at home

Looking for an easy to make go to snack? You’ll want to try your hand at creating these healthy fruit and nut bars at home!

  • 90g of cashew nuts
  • 90g of dates
  • A drop of vanilla essence
  • 30g of cranberries
  • 30g of raisins

Preparation time: 5 mins

so, how am i making these delicious chewy bars?

These delicious Nakd inspired fruit and nut bars are a healthy, easy and cheap alternative to store-bought products. All you need are a few simple natural ingredients and a food processor – it can’t get any easier than that!

Firstly, whizz up your cashew nuts in your food processor till they have a thoroughly chopped texture.

Secondly, add the dates to the mix and blend till you have what resembles an almost rubble like mixture (as illustrated in the picture below).

Thirdly, add the vanilla essence (opt out if you prefer) and whizz in the 30g of cranberries and raisins.

What’s more, without the additional fruit, you have the perfect Nakd Cashew Cookie replica! By now, you should have a squidgy mixture, clumping together when squished by hand.

Next, line a dish with cling film and spoon in  and press down the mixture.

Finally, leave your dish in the fridge for a few hours to set and you are good to go!

This recipe creates around four Nakd sized bars. For more, just double up the ingredients. These can even be frozen to enjoy later, it’s a win win really!

Your new go to homemade skinny pizza recipe

The skinny pizza is a low-fat, healthy and delicious alternative to the usual cheese and dough loaded affair. The best thing? It’s made with just a few simple ingredients!

Initially, you’ll want to gather the following from your kitchen:

  • White or whole grain tortilla (depending on your preference)
  • Tomato purée
  • Low-fat soft cream cheese
  • Your choice of toppings (I opt for vegetarian but the possibilities are endless, do feel free to get creative)

Once, you’ve got your ingredients, it’s time to start creating!

  1. Firstly, place your tortilla on a baking tray and smooth over a tablespoon of purée and follow with the cream cheese. Spread these evenly.
  2. Secondly, add your toppings as desired. If you are using meats, then be sure to have them cooked if required beforehand – vegetarian skinny pizza gets my vote every time. 
  3. Thirdly, it’s time to simply pop your pizza into your preheated oven at 200 degrees for a couple of minutes.

Voila, you have created a homemade skinny pizza! This low calorie pizza is not only swiftly made but surprisingly filling. Additionally, there’s no guilt if you eat the entire thing at lunchtime!
